Dates, the fruit from Middle Eastern date palms, have natural sugar for a quick energy boost. Dates are an excellent source of protein and fiber, which processed sugar and artificial sweeteners lack. Dates and water combine to create a natural sweetener with a lower Glycemic Index than table sugar, making it a better choice for your blood sugar.

Ingredients
- 6 pitted dates
- 1 ½ tablespoons crunchy peanut butter
- 9 walnuts
- ½ cup water
- ¼ cup unsweetened chocolate chips
- ¼ teaspoon vanilla extract
- ¼ cup coconut milk
- 1 pinch salt
- ¼ teaspoon hemp seeds
Preparation
- Place dates in a food processor and puree for one minute and thirty seconds. The mixture will conform to a medium size ball.
- Separate the date mixture into three smaller balls and shape each one into a cylinder.
- Then, compress the cylinder into a rectangular form.
- Place the bars on a lined baking sheet.
- Layer each bar with a half tablespoon of peanut butter and three walnuts arranged in a row across the top.
Chocolate sauce:
- In a saucepan, heat a half cup of water on medium heat. When the water begins to bubble, reduce to a simmer.
- Pour the chocolate chips, vanilla extract, and coconut milk into a glass container. Place the glass container over the saucepan to create a double boiler.
- Let the chocolate melt, stirring constantly.
- Once the chocolate is melted, using tongs dip each bar in the chocolate. Place the bars back onto the lined baking sheet.
- Sprinkle salt and hemp seeds on the bars.
- Place the bars in the freezer for at least 30 minutes, until chocolate coating is solidified.
